Interviewer: And can you talk about fats and lets start with animal fats? That is apparently very unhealthy for us, as well. 

Sally Fallon Morell: The vegetable oil industry as spent the last 100 years, literally started in 1913, the demonization of their competition which was butter and lard, and this has gone on for 100 years. This industry is extremely powerful. They control the media, all the media.  It is absolutely wrong. Butter and other animal fats, like Lard and Tallow, are extremely healthy. We need them in our diets they support fertility.  A very, very long list of what we need animal fats for. I would say the first thing that you need to change your diet for the better is to get rid of vegetable oils, margarine spread and cooking oils, and go back to using butter, cooking lard, and olive oil is fine I don't consider that a vegetable oil. 

Interviewer: So what's wrong with those things, the margarine and the zero trans-fats we see on the labels and the lower calories. 

Sally Fallon Morell: The rancidity. They are full of free radicals. The poly unsaturated liquid oils are very fragile. They break down when they are exposed to heat and oxygen and the processing does exactly that and then we are told we can cook in these fats. Yeah. So that causes more break downs. They are highly rancid, and they are full of free radicals. We know that free radicals are the real bad boy in the human diet. 

Interviewer: And so the theory is at least what we've been taught when we eat fat, we get fat so that's not correct. 

Sally Fallon Morell: Well, the Framingham study found that people eating most saturated fat and the most cholesterol weighed the least. 

Interviewer: Okay. 

Sally Fallon Morell: They were the most active. I don't think vegetable oils cause you to gain weight. I think they cause you to eat more, because your body says, "Oh, well here some fat." But it's not the kind fat that you need and you keep craving fat. And you get people eating tubs of spreads and tubs of margarine, because the body is saying, "I need more. I need more." So I think we tend to eat more, when we are eating the vegetable oils. 

Interviewer: And as we touched on before if we eat the butter, if we eat the animal proteins and the fat it doesn't go right here and clog up our heart because that's the theory, as well. 

Sally Fallon Morell: Now, some very interesting work has been done recently by Dr. Fred Kummerow at the University of Illinois on artery clogs. The artery clogs are calcium. They are not cholesterol, they are not fat. It is calcium that makes artery stiff and that builds up under the endothelium and causes these clogs and makes the artery prone to clots, as well. It turns out that is caused by oxidation and that is caused by smoking, for one, and free radicals from vegetable oils.
